Knock You Naked Brownies {Pioneer Woman}

My son (the little boy, as the twins call him) is still on a brownie kick, so away we go making more and more brownie recipes each and every week. We even made some last week on vacation in the motorhome. Good thing I like brownies and don't mind tasting them all. Click here to see all our brownie recipes, so far to date.

These brownies are delicious (and don't mind me I totally forgot the Powdered Sugar on top). AH, photographed, served and ALL of them eaten and then it hit me. I guess it wasn't missed, but to top them off I would of totally added it, and you should too.


Here are the girls saying goodbye to the little boy in Missouri last week. You can tell he is really gonna miss them. He wouldn't even take out his Hawaiian roll to hug them goodbye. OH, KIDS!!!


Let's get to the brownie recipe now. It's not as hard as it looks, but it does require a few steps and some unconventional things that you do not normally do. (like make the brownie so thick you can shape them on the counter and using a German Chocolate cake mix, yep! that's how it's done). But, no matter what it tastes GREAT!


Knock You Naked Brownies {from Pioneer Woman}

1 box (18.5 Ounce) German Chocolate Cake Mix
1 cup finely chopped pecans
1/3 cup evaporated milk
1/2 cup evaporated milk (additional)
1/2 cup butter, melted
60 whole caramels, unwrapped (of other kind of caramel)
1/3 cup semi-sweet chocolate chips
1/4 cup powdered sugar

Preheat oven to 350 degrees.

In a large bowl, mix together cake mix, chopped pecans, 1/3 cup evaporated milk, and melted butter. Stir together until totally combined. Mixture will be very thick. Press half the mixture into a well-greased 9 x 9 inch square baking pan. Bake for 8 to 10 minutes. Remove pan from oven and set aside.

In a double boiler (or a heatproof bowl set over a saucepan of boiling water) melt caramels with additional 1/2 cup evaporated milk. (I like to melt in the microwave, as long as you can do it without burning). When melted and combined, pour over brownie base. Sprinkle chocolate chips as evenly as you can over the caramel.

Turn out remaining brownie dough on work surface. Use your hands to press it into a large square a little smaller than the pan. Use a spatula to remove it from the surface, then set it on top of the caramel and chocolate chips.  Bake for additional 20 to 25 minutes. Remove from pan and allow to cool to room temperature, then cover and refrigerate for several hours.

When ready to serve, generously sift powdered sugar over the surface of the brownies. Cut into either nine or twelve helpings, and carefully remove from the pan.

Banana Crunch Muffins {TWC Linky Party #96 - Everything BANANAS}

It's a BANANA kind of day! Today is the weekly LINKY PARTY (yes I am a few hours late, but better late then never). I just returned from a 16-day road trip yesterday (dropping my girls off at college 1837 miles away) and my son started 8th grade TODAY! Needless to say, I've been BUSY!  But, please come share with us your favorite BANANA recipes. We recently made these banana muffins and they were wonderful. I still have a few left in the freezer that are calling my name. What have you made lately with BANANAS, we'd love for you to share a few recipes with us?

This is one of my "adpoted" sons, making banana muffins with us. I will have alot of visits from all my adpoted kids while my twins are away at college, so don't be surprised if you see lots of different kids faces around here.

Banana Crunch Muffins

3 cups flour
2 cups sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 pound unsalted butter, melted and cooled
2 eggs
3/4 cups whole milk
2 tsp vanilla
1 cup mashed banana (2 bananas)
1 cup medium-diced ripe banana (1 banana)
1 cup chopped nuts
1 cup granola
1 cup sweetened coconut

Preheat oven to 350 degrees.

Line 18 large muffin cups with paper liners. Sift the flour, sugar, baking powder, baking soda, and salt into the bowl of an electric mixer fitted with a paddle attachment. Add the melted butter and blend. Combine the eggs, milk, vanilla and mashed bananas and add them to the flour and butter mixture. Scrape the bowl and blend well. Don’t over mix.

Fold the diced bananas, nuts, granola, and coconut into the batter. Spoon the batter into the paper liners, filling each to the top. Top each muffin with some chopped nuts or dried banana chips, if desired. Bake for 25-30 minutes, or until the tops are brown and a toothpick comes out clean. Cool slightly and serve.

Pineapple Banana Smoothie {Sweet'N Low}

On vacation still and loving every minute of it. Even though this is a "busy-working" vacation, I am still having so much fun. (I never went to a 4-year college and lived in a dorm, so I am livin' it through my girls). Ya know it's fun when you stay up until midnight and then wake back up at 7am the next day just to go at it again all day long. We've shopped and shopped and organized and organized, we've done so much preparing and planning and creating great spaces in their dorm rooms that they are unbelievably awesome, if I must say so myself.

But one still must eat, right? Breakfast, Lunch, Dinner (what's that ?). I have been going hundred miles an hour and then some. This quick breakfast in the motorhome was a perfect pick-me-up.

Where am I ? St. Charles, Missouri. What am I doing? Dropping my twin daughters off at their first year of college (OH MY!), 1837 miles away from home. Why so far a way? An awesome dance scholarship with an amazing dance team. They are attending Lindenwood University a 4-year private college, for those who haven't heard me say it yet and they will double major in Marketing and Dance, plus be debt free when they graduate. NO STUDENT LOANS. That is why we are in Missouri and not in California. The school was half the price of a California Private University, and sticking with our Dave Ramsey CASH ONLY plan, my girls were able to land a great scholarhship and the little money they did have to pay, they both paid for in full, in cash, in advance for their first year of college. PROUD MAMA!



Above is a sneak preview of their college dorm room and I can't wait to show you all the details and all the AMAZING Pinterest ideas we made happen in their tiny little space. But, while on the road we needed to eat. Oh, eating Breakfast, Lunch and Dinner (what's that?), I am afraid sometimes I am starving the other members of my family because I've been so crazy busy (they've had many fast food meals too). We drove our motorhome from California to Missouri filled with all the twins belongs and so while on the road I still managed to do a little cooking and baking. Here is a great recipe for a quick and easy breakfast on the road, that I created with the compliments of FoodBuzz and Sweet'N Low.


Pineapple Banana Smoothie with Sweet'N Low

1 cup apple juice
1 banana (cut in slices)
1 to 2 slices of fresh pineapples (or from a can)
1 pkg Sweet'N Low
1 tbsp Honey
1/2 cup crushed ice

Put all ingredients together into your blender or smoothie maker and blend until smooth. Serve cold for breakfast or an after school snack. Great way to get in a few bananas for those of us who don't like to eat them on their own (like me!).

Apple Cake & Happy Birthday Grandma Fay {my Angel in Heaven}

It would be my Grandma Fay's 100th birthday today. It's so hard to imagine and I still sometimes can't believe she is gone. I believe she is my Angel in Heaven watching down on me, some say I was her favorite grandchild and that I am just like her and ya know I am perfectly okay with that. She was funny and quirky and she had her little things about her that we all can laugh SO hard at, including all our thift-store Christmas gifts. But I love'd her very much and I would take her quirky style anyday.



We were having a BBQ for my twin daughters at my Uncle Mike's house (who is my Dad's twin brother, and her sons's) and I was suppose to bring dessert. I thought of all the apples I had that needed used up and this cake came to mind. I began making it and then it hit me, I think it's my grandma's birthday this month and yep (a little check in my scrapbook to confirm that date) and yep it would be her 100th birthday today. She was born August 11, 1912. I can't imagine her being here today, but I also know she is in heaven and watching down on my family each and every day.

This recipe is a re-post, but the first time I posted I didn't have any photo creating the cake, so here ya go. Also I decided to make this version Gluten-Free for one of my daughters and guess what it worked out perfectly. SO EXCITED I have another dessert I can make her.


Apple Cake (gluten-free version)
recipe from Grandma Fay

2 cups sugar
1/2 cup oil
2 cups flour (or all-purpose gluten free flour)
2 eggs
4 cups apples (peeled and diced)
2 tsp vanilla
1 tsp cinnamon
2 tsp baking soda
1 cup walnuts, crushed

Mix all together and pour into a greased 9x13 baking dish. Bake for 1 hour at 325 degrees.

Cream Cheese Frosting
1-1/2 cups powder sugar
8 oz cream cheese
4 tbsp butter
1/4 tsp vanilla

Mix all together in an electric mixer until smooth. Spread on top of cake after it has cooled down.
Store the cake in the refrigerator, but serve at room temperature.


I would say we pretty much devoured this cake. And yep it was delicious.

Raspberry Greek Breakfast Parfait {Secret Recipe Club}


We are official on our 16 day-motorhome adventure. Driving cross country from California to Missouri to drop off my twin daughters at their first year of college. It's bitter sweet as I know I am going to miss them terribly, but at the same time I am so excited for them. We have been preparing for this trip for an entire year, shopping, crafting and getting everything they need for a home'y dorm room. I can't wait to share pictures with all of you when I return. But for today I need a quick and easy recipe for my Secret Recipe Club and I found a perfect one on my blog I was assigned.

Here we go with my 16th post for the Secret Recipe Club; Group C .

Secret Recipe Club

Raspberry Greek Breakfast Parfait

1 greek yogurt - vanilla
1/4 cup fresh raspberries
1 tbsp honey
1 tbsp granola
1 scoop of Cool Whip (optional, great for a dessert in stead of breakfast)

Layer the yogurt and raspberries in a tall glass with a drizzle of honey in between each layer. Top with granola and a scoop of cool whip to make it a great tasting dessert.

Today we are sharing LEMONADE recipes, from drinks to desserts and anything inbetween.

I am still on the road, getting ready to leave my girls in about 3 days for their first year at college and mommies first year with out them, (but don't worry I am already making my first plane ticket back in less then 30 days for their birthday and dance performance).



WOW, talk about some simple but delicious punch, perfect for a graduation party, baby shower, backyard bbq or just hangin' by the pool.

Pineapple-Lemonade Punch

1 quart Lemonade (Crystal Light or Country Time work great)
4 to 6 fresh Lemons
1 liter Sprite (Sun Spot)
1 large can Pineapple Juice
Ice

Mix all ingredients together in a large punch bowl and serve. This punch with dissappear befor eyour eyes. It's so refreshing.

Asparagus with Hollandaise Sauce

This is one of those recipes, the YEP I've found it, this is IT, kind of recipe. I don't think I will make asparagus any other way, ever again. I made this recipe a while back when I was assigned this blog for one of my Secret Recipe Club assignments, and I know I am just now getting around to posting it (too many recipes, not enough days in the blogging-week), but it's now here for you to enjoy. Better late then never.


I am posting this for you now because I will be making this recipe again this week while we are on our 16-day road trip from California to Missouri. It's an easy recipe, it's delicious and what better thing to make while camping and enjoying other delicious food.


Asparagus with Hollandaise Sauce

1 bunch of asparagus (cooked to your liking, broiled or oven cooked)
2 tbsp fresh lemon juice
4 tbsp boiling water
2 large egg yolks
1/2 cup unsalted butter
1/4 tsp cayenne pepper
1/2 tsp salt
Melt the butter and keep it warm. Heat the lemon juice until just warmed. Have small saucepan with boiling water and a measuring spoon ready.
Place the top of a double boiler or a medium bowl over hot water. Place egg yolks in the double boiler and whisk until they begin to thicken. Add 1 tablespoon boiling water. Continue to beat the sauce until it begins to thicken. Repeat with the remaining water, one tablespoon at a time, whisking the mixture after each addition. Keep the heat low enough so the eggs don’t begin to scramble. Remove the double boiler from the heat.
Whisk in the warmed lemon juice. Beat the sauce like crazy with a wire whisk as you slowly pour in the melted butter. Add the salt and cayenne and beat until sauce is thick. Serve immediately.
If the sauce gets too thick, whisk in hot water, one tablespoon at a time, until it reaches the desired consistency. If the sauce begins to separate you can add 1 to 2 tablespoons of cream and beat with a whisk until it is smooth again.

Chocolate Strawberry-Banana Smoothie

This was a creation made from left-over chocolate syrup. There are not many left-overs in my house that go to waste, they usually get turned into something else along the way. I am not so much into having the same thing over and over again, but taking a left-over or an over-abundance of something and making something new, now that's my specialty.


I had made yet another brownie recipe, and the chocolate fudge sauce was almost triple what I needed, so after a few days of looking at in the the frig, I thought how about adding a little chocolate to my already yummy Strawberry-Banana Smoothie.



Chocolate Strawberry-Banana Smoothie

5 strawberries
1 banana
1 activia yogurt
1/4 cup chocolate fudge sauce (use left-over homemade sauce or store bought)

Throw all the ingredients into your Magic Bullet or blender of choice and mix together. ENJOY!

Camping Cake CUPCAKES


This is a recipe I learned almost 15 years ago when I first met my husband. It's a recipe his mama makes all the time and a recipe that I've made for him ever since it was past down to me. Here is my original post about the camping cake, but today I wanted to make this oh so delicious cake into some cupcakes. This was a trial run and they came out PERFECT, I will be making these on our trip this week. Even though we are camping, motorhome'ing and driving 12 hours a day to get to our destination of St. Charles, Missouri there is always time to bake some dessert for my family even if it's while we are driving on the road going 70 miles per hour down the highway.


Camping Cake CUPCAKES

1 box Deviled Food Chocolate Cake Mix
1 box of Jello COOK & SERVE Pudding (can NOT be instant; either size box is fine, I use big box)
Chocolate Chips
Walnuts (or favorite nuts)

Make the pudding according to the directions on the box (the cook & serve, add the milk and cook on the stove; yea, that's the one!). Then add the dry cake mix to the cooked pudding and mix well (you do NOT add anything else, no eggs, no oil, no nothin').

For cupcakes, I lined my muffin pan with cupcake liners, then with an ice cream scoop pour one large scoop of mix into each cupcake liner. Sprinkle with chocolate chips and nuts (about 1/2 a bag, more if you'd like). Bake. (approx. 30-35 minutes; I usually follow the cooking directions on the back of the cake box) There you have it, perfect cupcakes to serve! The cake is extremely moist and everyone loves it!

Chocolate Chip Cookie Cheesecake {CRAZY COOKING CHALLENGE}

I have only attempted to make cheesecake a few times so I was happy when this attempt came out PERFECT! I had seen this recipe on Pinterest and tucked it away for a baking day, that baking day came when I baked a batch of chocolate chip cookies that came out a flat mess. (I've got pictures to prove it, next time I will listen to negative comments on a blog before I make a recipe). But, the cookies tasted SO good and I couldn't bring myself to throw them away, they were just flat and all broken to pieces and I knew I needed to make "Lemonade out of Lemons", ya know what I mean.

I wanted to make a really cool recipe for today and well this recipe is just that. It's super delicious and super cool and just perfect for a flop cookie recipe made into an AMAZING Cheesecake recipe. Enjoy!


We have completed our ONE YEAR of CRAZY COOKING CHALLENGES, this month completes my goal of a 12 month challenge and I couldn't be more proud. I started this CRAZY challenge one year ago on my blogs one year anniversary and it has been a HUGE success, I've met some amazing bloggers and one very special blogger that I even got to meet in person and I am sure we will be friends for many years to come. Chocolate Chip Cookie Cheesecake

inspired by this recipe found on A Thought Chronicle originally from Cookbook and Recipe Cards

2 pkg. (8 oz. each) Philadelphia Cream Cheese, softened
1/2 cup sugar
1/2 tsp vanilla
2 eggs
1 to 2 cups baked & crumbled chocolate chip cookies
1/4 cup chocolate chips cookies
1 pre-made Pie Crust

Preheat oven to 350. Beat cream cheese, sugar and vanilla in large bowl with electric mixer on medium speed until well blended. Add eggs; mix just until blended. Add in approximately 1 cup of chocolate chip cookie crumbles and mix by hand until just combined.

Pour cheesecake mixture into pie crust. Top with a sprinkle of chocolate chips and crumbled chocolate chip cookies.

Bake for 40 minutes or until center is almost set. Cool. Refrigerate 3 hours or over night.

White Chocolate Cupcake with White Chocolate Filling {TWC Linky Party #93 - CUPCAKES GALORE}


This is a very heavy and thick cupcake, but if you like heavy and you like thick then this is the cupcake for you! My step-son LOVES white chocolate and for his birthday we flew him to Las Vegas from Texas and we drove from California to Las Vegas to meet him. We had a wonderful 21st Birthday Celebration. Of course I brought some of his favorite treats (Peanut Butter Krispies) and then I tried these new recipe to make and bring with me (I even sampled one in the car before we arrived, I couldn't help myself).


My hubby and I on our 5 hour drive to Vegas, and I just had to sample (and photograph the cupcake), in the car before we arrived. (below) My step-son and I enjoying Las Vegas life on his 21st birthday.

White Chocolate Cupcake with White Chocolate Filling

3/4 cups cake flour
2 tsp baking powder
2/3 cup whole milk
1/2 tsp vanilla
4 egg whites, room temperature
6 tbsp butter, softened
1/2 cup sugar
1/4 cup sour cream
12 white chocolate dove candy pieces, unwrapped

6 oz white chocolate, chopped
1 pkg (8oz) cream cheese, softened
1/4 cup butter, softened
1/2 tsp vanilla
2 cups powered sugar

Preheat oven to 325. Place paper liners in cupcake pan. Whisk flour and baking powder in a small bowl. Combine milk and vanilla in another small bowl. Beat eggs separately on high speed of an electric mixer until stiff peak form. Then in your large mixing bowl beat butter and sugar on medium speed until fluffy; beat in sour cream until smooth. On medium speed, add flour mixture in three additions, alternating with milk mixture, mix until smooth. Whisk in 1/3 of the egg whites and then fold in the remaining egg whites. With a large ice cream scoop divide the batter among the liners.

Bake 17-20 minutes or until toothpick comes out clean. Remove pan from oven and put on cooling rack. Immediately press one white chocolate truffle candy into each cupcake until flush with top of cupcake. Remove cupcakes from pan. Cool 30 minutes or to room temperature.
Meanwhile, for frosting, melt white chocolate in microwave, stirring every 30 seconds. Let stand until slightly cooled. Combine melted chocolate, cream cheese, butter and vanilla until well blended. Slowly add powdered sugar; beat well.
